Sweet Interruptions For the Holidays

Here is another one that looks good.

Chocolate Covered Cherry Cookies
Ingredients
1 1/2 c. flour
1/2 c. cocoa
1/4 t. salt
1/4 t. baking powder
1/4 t. baking soda
1-10 oz. jar of cherries (about 48)
1/2 c. butter or margarine
1 c. sugar
1 egg
1 1/2 t. vanilla
6 oz. semi-sweet chocolate chips
1/2 c. sweetened, condensed milk (make sure this is not evaporated milk)

Directions
Combine flour, cocoa, salt, baking powder, and baking soda; set aside.
Drain cherries, reserving juice; set aside.
Beat butter on medium speed 30 seconds.
Add sugar, beat until fluffy.
Add egg and vanilla, beating well.
Gradually add dry ingredients, beat until well combined.
Shape into 1 inch balls. Place 2 inches apart on an un-greased cookie sheet.
Press center in with thumb and place a cherry in the center.
In a small saucepan combine chocolate chips and sweetened condensed milk. Stir over low heat until melted. Remove from heat and stir in 4 t. of cherry juice.
Spoon frosting over each cherry. Spread with spoon to cover.
Bake at 350° for 10 minutes, remove from pan and cool.

Makes approximately 48 cookies.

this is as far as we have gotten there will be more and I will add on
There will be 20 people and my Mom who is Divorce from my Dad and my 2 sisters and me will go the day before X-mas eve and start to cook
We also woll have cookies as sometime this week we will be baking

Nothing fancy at all. His parents insisted on PLAIN food. His brother's wife is bringing over Lasagna, which we were told would be set aside. (I'm not gonna let that happen.. I'll eat it!)

All planning your menu's and I had my Christmas dinner yesterday..will tell you I'll never have a turkey with the carcas..bought a 22lb. turkey, brought my dressing to the butcher and he de-boned and stuffed it...what a treat to serve...sure was yummy...no mess/no fuss~

Jaye, nothing wrong with grilled pork chops!!! We have had those also or bar b que chicken. One year we were so tired after getting up at dawn to have gifts with son and his family we went home took a nap. When we got up all everyone wanted was an omlet so hubby made us all omelets. Best meal every!!!

Haven't had time to make final decisions, but will probably have pork roast, turkey and dressing, curried fruit, and the usuals. DSIL will bring goodies with her when they come up from FL but don't know what she's bringing yet. This seems to be the busiest, craziest year in a long time. Combine the extra hours at the med center (not complaining), social obligations that increase each year (DH is in several organizations that have dinners/parties, etc), doing extra shopping for DFIL this year since DMIL isn't here to do it, wedding planning/shopping with DD, etc. and Christmas is not getting much attention this year. DBIL and DSIL will be coming sometime before Christmas and be here for about 10 days, their 2 adult children, spouses, and 5 grandkids will be coming the day after Christmas for the weekend. I'm looking forward to (hoping for) some very quiet, boring days in January!

I try and get together with family on Thanksgiving since Christmas is more of a stay at home day. Since my children and I all live in different cities and even different states when they had young children I encouraged them to stay at home and enjoy the day with the kids. I would travel to them and spend the night to see the kids open presents. Now that they are all grown or in their teens they still do that but as I get older it is more difficult for me to drive to them the spend the day.
I really miss the days when I lived in the same city as my DM & MIL and we had big combined family Christmas dinners. I really miss fixing that big meal for everyone.

Okay, here it is, IMHO, the Best Fudge Recipe Ever (special thanks to my sister Dixie!)

Dixie's Fudge

4 1/2 cups really good sugar (use baker's sugar or any really good brand)
1/2 cup butter
1 cup evaporated milk
1/2 lb. marshmallows
2 oz. unsweetened chocolate
12 oz. semi sweet chocolate chips
3 bars (4 oz. each... for a total of 12 oz.) german sweet chocolate
1 tbsp. vanilla

Butter a large cookie sheet that has sides about 3/4" - 1" tall. Combine butter, evaporated milk, and sugar in large pot. Stir over medium heat until sugar dissolves. Bring to a boil. Romove from heat, add marshmallows, stir until melted. Add the 3 chocolates, one at a time, until they melt in. Stir in vanilla. Pour fudge into buttered cookie sheet, spread it out with rubber spatula. Cover with saran. Store cut in pieces in well sealed plastic boxes.

Look at this recipe. I just found it on nabisco site. It looks really good...

Ingredients:
58 NILLA Wafers, finely crushed (about 2 cups crumbs)
1/2 cup powdered sugar
1/2 cup chopped PLANTERS Walnuts
1/4 cup boiling water
2 tsp. MAXWELL HOUSE Instant Coffee
2 Tbsp. margarine or butter
1 Tbsp. corn syrup
36 maraschino cherries with stems, well drained
1-1/2 pkg. (12 squares) BAKER'S Semi-Sweet Chocolate, melted


Preparation:
Mix crumbs, sugar and walnuts; set aside.
Add boiling water to coffee granules in small bowl; stir until coffee is dissolved.
Add margarine and corn syrup; stir until well blended.
Add to crumb mixture; mix well.
Shape about 1 rounded teaspoonful of the crumb mixture around each cherry, leaving stem of cherry uncoated.
Place in shallow pan; cover. Refrigerate 1 hour.
Dip cherries, 1 at a time, in chocolate, holding cherries by the stems and turning until completely coated.
Place on wire rack set over sheet of wax paper to collect drippings. Refrigerate 30 min. or until firm. Store in refrigerator.

Cream Butter Sugar add yoke, Vanilla pinch of salt
Than 1 cup of flour mix than the other Spread on ungreased cookie sheet I used wax paper to spread the dough out cook at 350 in oven ASAP as it comes out of oven put candy bars on let them melt alittle than spread put chop nuts on top and cool

Sorry had to go get more baking stuff and Salt for drive way
