Sweet Interruptions For the Holidays

Ferndale, AR(Zone 7b)

OMG, the good food! Lynn, my mother made a different version of the overnight cookies every Christmas. They were called Surprise Meringues and were baked at a low temp but not left overnight. I love them! Also, it's hard to beat a sour cream or cream cheese pound cake. Yum!

(Zone 1)

Fleurs: Yep, they are like little melt in your mouth Meringues. Do you have your Mom's recipe to share? I would love to have it!

I only did the overnight thing once, now I do the Alternative baking method. They really are great, seems to me I made some mint ones once too.

I used to have a recipe for Surprise Muffin/Cupcakes ... where you put a hershey's kiss or cherries or something good inside the cupcake.

Why didn't someone tell me we would be having all these desserts tonight. I wouldn't have eaten so much dinner. What ever will I do. Shucks, forget it pass the cookies please.

Oh, I live in Daytona Beach.

We are going to a Pot Luck this weekend and I'm making a Chicken Casserole as well as the Cherry Delight dessert! The recipe for the casserole came from my sister. I do a short cut version when pressed for time, use a store bought rotisserie chicken instead of cooking chicken myself.

CHICKEN POPPY SEED CASSEROLE

5 or 6 seasoned, cooked chicken breasts, chopped (or store bought rotisserie chicken, cut up)
2 cans cream of chicken soup
1- 8 oz container sour cream
1 1/2 - 2 sleeves Ritz crackers crushed (I put them in a gal. size zip lok bag and crush by hand)
1 stick melted butter
Poppy Seeds

Season and cook the chicken breasts. Chop when cooled. Stir soup and sour cream together in large bowl. Stir in cooked, chopped chicken.

Spray a 9"x13" casserole dish with non stick spray. Spread chicken mixture in the prepared pan. Sprinkle crushed Ritz crackers over top. Pour melted butter evenly over top. Generously sprinkle with poppy seeds. Bake at 350 degrees for 35-45 minutes or until top is lightly browned and heated through.

For us that collect birdhouses, how about these edible Gingerbread Birdhouse Cookies.. also from Pillsbury.

INGREDIENTS
1 roll (16.5 oz) Pillsbury® refrigerated gingerbread cookies
Vanilla ready-to-spread frosting (from 16-oz container)
Thin pretzel sticks
3 Tootsie Roll Midgees® candies, unwrapped
White decorator icing
Assorted colors of decorating gels
Miniature candy-coated chocolate baking bits

DIRECTIONS
1. Heat oven to 350ºF. Remove half of cookie dough from wrapper; refrigerate remaining dough until needed. On lightly floured surface with rolling pin, roll half of dough to 1/4-inch thickness.
2. With 3 to 3 1/2-inch cookie cutters such as diamond, heart or star, cut out dough shapes for birdhouses (or cut desired shapes from dough with knife). Use 1-inch canapé cutter or sharp knife to make "door" in bottom half of each. If desired, use drinking straw to make hole in top of cookie for hanging. Place 3 inches apart on ungreased cookie sheet. Repeat with remaining half of dough.
3. For decorations on birdhouses, roll scraps of dough and cut miniature shapes such as trees, stars and other small shapes; do not attach to birdhouses. Place miniature shapes on cookie sheets.
4. Bake 7 to 11 minutes or until set (bake small shapes about 7 minutes). Carefully remove from cookie sheet; place on cooling racks. If necessary, re-poke holes for hanging. Cool completely, about 20 minutes.
5. To decorate cookies, use vanilla frosting to attach small baked shapes to birdhouses. Attach pretzels for roofs. Cut each unwrapped candy into 4 lengthwise pieces; attach 1 piece with frosting below door to look like perch. Use vanilla frosting or decorator icing to make snow on roofs. Use decorating gels and baking bits to add decorations or words to birdhouses.
