Being that I can't sleep, and wonderful recipes still floating in my head... and Phyllis needing a mushroom dressing recipe.. guess it's okay to help a sistah in need..

Here's one..this seems so rich, it has Cognac.

Mushroom Dressing

8 slices white bread, cut into 1/2-inch pieces
1 1/2 pounds mixed mushrooms, such as cremini and shiitake
2 to 3 tablespoons unsalted butter, plus more for the pan
2 tablespoons extra-virgin olive oil
6 shallots, sliced
4 cloves chopped garlic
1 tablespoon minced fresh rosemary
1/4 cup Cognac, or other brandy
2 cups chicken broth, homemade or low-sodium canned
2 teaspoons kosher salt
1 cup heavy cream
3 large eggs, beaten
Freshly ground black pepper
1/4 cup chopped fresh flat-leaf parsley
Directions
Preheat the oven to 350 degrees F.

Spread the bread cubes out on a baking sheet and toast in the oven until golden and crisp, about 5 minutes. Set aside to cool.

Trim the dry part from the bottom of the cremini stem and quarter. Stem and quarter the shiitakes. Melt 2 tablespoons of the butter with the olive oil in a large skillet over medium heat. Add the mushrooms, shallots, garlic, and rosemary and cook, stirring occasionally, until the vegetables soften and brown, about 25 minutes. Add an additional tablespoon of butter, if needed, to prevent sticking. Carefully add the Cognac (if working over gas, pull the skillet from the heat), and simmer until the liquid is slightly syrupy. Stir in the chicken broth and salt and bring to a simmer.

Whisk the cream, eggs, and pepper, to taste, in a large bowl. Add the bread, mushroom mixture, and parsley and toss until the bread is moistened. Transfer the dressing to a buttered 1 1/2-quart baking dish. Bake, uncovered, until the dressing sets and the top browns, about 1 hour. Let dressing sit for 15 minutes before serving.

#2.. a simpler one..
Rustic Mushroom Dressing
Ingredients
2 (8 ounce) rustic-style Italian bread
5 tablespoons butter
5 stalks celery, chopped
2 large onions, chopped
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 1/2 lbs fresh mushrooms, coarsely chopped
1 (14 1/2 ounce) can chicken broth or beef broth
1/2 cup water
3 large eggs, lightly beaten
Directions
1-Preheat oven to 300 degrees.
2-Cut bread into slices and cube. Spread bread out on baking sheets in single layers and bake in oven for 30 minutes. Remove and allow to cool completely.
3-Increase oven temperature to 400 degrees.
4-Butter shallow, 2 quart baking dish.
5-Melt butter in large skillet over medium heat; add celery, onions, salt and pepper, and cook until just beginning to brown, about 15 minutes.
6-Add mushrooms to skillet. Cook, stirring occasionally, until liquid has evaporated and mushrooms are tender, about 10 minutes. Transfer to large mixing bowl and allow to cool.
7-Add bread cubes to bowl and toss with mushroom mixture. Gently stir in broth and water. Season dressing to taste with salt and pepper. Add eggs and gently combine.
8-Spoon dressing into buttered baking dish. Cover with foil and bake for 25 minutes. Remove foil and bake additional 25 minutes.
9-Serve warm.

Time for you all to wake up, I have a new brug open, and it is so pretty. I thought they were going to be yellow, but I have one open, and it is pink on the bottom, and works up to a white. it is so pretty, and smells so sweet!!!!!!

Her work and school takes up 80+ hours of her a week. We should find out in the next 2 months where she will do her Internship starting next August.

Funny, here you all are talking what YOU fix for Thanksgiving dinner. Lately, it is my son (Tink's DH) who does the cooking. He LOVES Thanksgiving and can't wait to get in the kitchen a do his thing. He has deep fried the turkey but this year it is going to be roasted. Has his own dressing recipe (never got it from me) and mashes far too many potatoes. He is very tradional for a 35 yr old and has to have turkey at Thanksgiving and Ham at Christmas. Must have dressing, mashed pot., green bean casserole, my pies; anything else is up for grabs. Your never know what kind of traditions you are creating when you bring up kids.
I have a terrific lemon bar recipe and will post when I get home later this evening.
BJ, so glad that the current medicine is working for you. I know you love food and it was so painful for you to eat that you were always putting it off. Now maybe you can truly enjoy Thanksgiving.

Morning sistahs... and thank you all for thinking of me and the "wonder pill" I'm taking. It does seem to work sometimes. But, last night it didn't. I think I tossed everything I ate for the last two days. It was a Major, major attack.
I did get to sleep after that, though. And I slept really well.

I'm so glad you're all going to have nice Thanksgivings... but, I'm going to beg off the big meal this year... I think I'm going to do a chicken just for me and Don. The kids can all go to someplace else for dinner. I'm just not up to it.

Janice what kind of pies do you make? You mentioned them, now you have to share.
I make peanut butter balls also, but right after I dip them in chocol;ate, I have several dishes ready, and dip them in various things like crushed toffee bits, or coconut, or just sit them on top of pecan halves. Sometimes I melt white chocolate, and drizzle it over the top of the chocolate dipped ones, just to make thenm different.
I will be here lurking for today, but will be gone Thursday afternoon, and Friday for my foot surgery. I will be back on as soon as I can get out of bed. Hopefully by Saturday morning, just long enough to say hello.

Deborah, the colonoscopy revealed a slight case of diverticulosis... but nothing serious... and no infection as diverticulitis. He just prescribed 1 teaspoon of Benefiber each morning to keep those pockets clear.
I'm almost sure that the doctor has found the problem.... here's the explanation I found on a site that can explain it better than I can.

What is gastroparesis?

Gastroparesis, also called delayed gastric emptying, is a disorder in which the stomach takes too long to empty its contents. Normally, the stomach contracts to move food down into the small intestine for digestion. The vagus nerve controls the movement of food from the stomach through the digestive tract. Gastroparesis occurs when the vagus nerve is damaged and the muscles of the stomach and intestines do not work normally. Food then moves slowly or stops moving through the digestive tract.

PLUS, the symptoms hit it on the nail. The first diagnosis I've had in 6 months that actually fit what I'm going through.
* heartburn
* pain in the upper abdomen
* nausea
* vomiting of undigested food—sometimes several hours after a meal
* early feeling of fullness after only a few bites of food
* weight loss due to poor absorption of nutrients or low calorie intake
* abdominal bloating
* high and low blood glucose levels
* lack of appetite
* gastroesophageal reflux
* spasms in the stomach area
However, my hearburn & nausea don't seem to be very bad... and, so far, my blood glucose levels test fine... but all those other symptoms are right on.

They have to review it and the doctor there has to approve it before they set an appointment. They have no idea how long that takes. SHEESH... does it take an act of congress to get an appointment for some tests these days?

Glad they at least got a diagnosis, BJ. Sometimes Ithink that is the biggest problem, finding out WHAT you have. Now they can work on healing/curing/treating it. I'm sure you will find out what works and what doesn't as yu go along. Since the pill worked before but not last night thingk (or write down) what was different about those two times. Amont of food, time you ate, time your took pill, etc. This will help you figure out what works. My DD did this when he found out he was allergic to sulfites and it help him pin point what he could do and not do.

Marion, that cake sounds yummy. no need for decorations. I have a recipe that calls for buttermilk - wonder if they are the same? Nothing smells better than a chocolate cake coming out of the oven.

Marion, an enabler???? Oh, surely not. Those magazines and website links must have been sent by someone impersonating our sistah.

Jaye is a pretty good enabler herself. And thank goodness! It's wonderful to have 'sew' many sistahs willing and eager to share their knowlege and enthusiasm for sewing.

I'm being naughty - wasn't supposed to get back on the computer before leaving for work. Bad me. Bad, bad me.
