Are you wanting to keep them stored fresh or preserve (can or freeze) them? If you want to can/freeze, try the canning/freezing forum--there are lot's of very talented folks over there who can help with that.

Fresh or dried - don't know how I could keep them fresh for long. I canned some last year and we're just not too big on pickled stuff. Freezing turns them to mush. I was hoping for an alternative to these two.

There are several folks on the canning/freezing forum who dry fruit and veggies too. I have ulcers and can't eat any type of peppers anymore so I don't know anything about preserving them. I can or freeze all my fruits and veggies. Seems like I remember a friend (many moons ago now) who used to tie her hot peppers and hang them to dry. They looked pretty and kept well for her. I've never tried that though. If nobody on DG can help you, you could try running a search on the internet (if you haven't already tried that).

Thanks NL1950 - I'll head over to canning and freezing. The peppers that folks tie into bunches are not jalapenos. ;~}
