LK, potato soup is easy.
Brown some leeks, add cubed potatoes, stock and cream. A little caraway along with your seasonings. And towards the end, to thicken it up, I cheat, I stir in a packet of instant mash potatoes.

OHHHHHHHHHHHHHH I want tater soup, when I was in Europe I had the mostest bestest tater soup ever, it was leek potato soup. I will be making it sometime soon. I am trying to get mom over here on this thread. Just maybe I can this week, she is ata dr appointment today. I am kinda worried about her now, I am thinking as much as this wind is blowing she might end up in Kansas visiting Dorthy and Toto. Just inside while the eggs are boiling, I have a hen that is not acting so right so gonna isolate her for a while and give her some extra treats. It is one of them drop off's.

LK, those low sodium Swanson brand chicken stock will do. I don't like to add water in my cooking, always stock.
Sometimes I add bacon to the leeks... very yummy... cook till soft, but not browned.
You can use half and half or double cream. Depending on how creamy you want it. Or not use it at all if you're watching calories :D
Your regular seasonings but I like the bite of caraway seeds.
Top with croutons.

WEll what a great day!! The end of mud slinging commercials...It is sunny... it is windy... it is raining....snow level is supposed to be down to 2500 feet.....something for everyone!!! For me Jaye that soup sounds just Souper!!!!! I know that's BAD but I couldn't resist...lol!

OOOooo Potato Soup is my alltime favorite... Mom used to make if for me when I didn't feel good as a kid... and I make it now when I start not feeling good... Here's what I do... really simple.
I chop up a couple slices of bacon kinda small... then brown that with chopped onions in a skillet without grease... blot it with a paper towel to remove most the grease left from the bacon. Boil diced potatoes with just enough water to cover them... when done, pour off the water, and add just enough milk to cover the potatoes, add the onion and bacon... shread a little carrot (for color), some english peas if you want ( I don't like the peas in it, but mom did)... and about a teaspoon or two of instant potatoes... salt and pepper to taste (I like a lot of pepper) bring to a boil, stir frequently... about 10 minutes(so the carrots are done)...
Mmmmm... sooo good.

Nope... didn't go back to bed... poured Don and I a cup of coffee, and we sat out on the deck and had a little small talk... we feel better now.

Well, they all sound very good. It is amazing how many variations there are for potato soup??? I like to shred some extra sharp cheddar cheese on top of mine, then eat with some buttered crackers. Did someone say diet? What diet? LOL

Oh Kathy, Pooh is so adorable! Puppy kisses for sure are one of my favorites! BJ is right about the guinea, they have really plumped up. They don't have personalities like the chickens do....they're scaredy cats...errr...guineas...I could eat one. I couldn't eat any of the ones that have names, but I don't think the guineas do!

Potato soup is one of my favorites too. I don't think I've ever had any canned Tater soup. My DD was so bad when she was younger. I'd make tater soup and she'd "float" about 2 Tbls. of butter on top. Never mind that I already had butter in the soup!! It's a wonder she still wears a size 5!

First thing after voting, I came home and filled in two holes Woody dug (his escape hatch yesterday) then tried to play with my new sewing machine but was too stressed and depressed over the Woody situation to concentrate. Had a screaming headache and my neck muscles were so tight that they were pulling my eyebrows up. Went back to bed and tried to go to sleep but the doorbell rang .........

It was FedEx delivering a BIRTHDAY PRESSIE from my SISTAHS! Thought it was something I had ordered and forgotten about but, no, the packing slip had Kathy's name on it and said Happy Birthday from your sisters. It is so cool! A butterfly kit with a pop-up habitat, items needed to feed caterpillers and butterflies, and a cup to house the caterpillers while they eat then form chrysalids. Also included is a certificate for the caterpillers - all I have to do is call and they send them to me. The caterpillers will form chrysalids in 5-10 days, then the butterflies will emerge in about 7-10 days. They will be Painted Lady butterflies! THANK YOU, SISTAHS!

I could order them now but the temps will be too low to release them into my garden (and there's not much left in the garden for them to feed on) and they would have to live out their 2-3 week lifespan inside the habitat. I think it would be much more exciting to be able to release them into our butterfly garden full of blooms for them to flutter around and feed. That means I would need to wait to order the caterpillers until next spring - when the temps stay above 55 degrees. Would that be ok with everyone? I promise to share pictures of them in the garden. Wouldn't that be more fun than taking pictures of them in a cage? They would be able to mate, lay eggs, and start a new generation of butterflies in the garden but not sure they would do that in the cage.

Gosh, I don't want to sound uninterested or ungrateful - because this pressie made my day! - but am thinking how much more fun it would be to watch them in the garden. Hope I'm not hurting anyone's feelings. THANK YOU FOR MAKING MY DAY!
