This is my first year growing black eyed peas (or pretty much anything, truth be told,) and I just opened my first pod to find lovely peas that are full size, but light green in color rather than the light tan color of dried peas. I've never even seen fresh blackeyes before, much less grown them, and I'm wondering if they are ready to pick and eat fresh when green colored or if I need to leave them on the vine a bit longer until they turn tan.
When to pick black eye peas?
Personally, I only use Blackeyes as green shellies. If they are filled out with full size peas they are ready. If however you want dried peas for some reason, just let the pods dry on the vine, pick , and then shell.

We prefer them as young and small as is practical to shell them. Boil with salt pork or bacon until very tender and soft, probably at least an hour (no al dente peas for us).
