i see this tree(!) in cherokee north carolina. in cold weather it is just the trunk in warmer weather the shoots start to branch out. the older the leaf which gets to be larger than a plate isthe softer it becomes. weird. what is it?

I believe it is a Paulownia tomentosa (Empress Tree) a non-native noxious weed, though it does make a beautiful tree. Here's a pic from PlantFiles

i suspected it was the empress tree, but didn't know for sure, it does look like it . they have a habit of coming up at the foundation of buildings and the roots will lift a skyscraper or driveway ,sidewalk. they are , in my opinion, something to leave in the woods or someone else's yard
I agree with empress tree. I'd get rid of it as they are quite invasive.
