Is spinach one of the cut and come back veggies?

Yes, indeed it is. I use a pair of kitchen shears to cut mine or you can use a sharp knife. Just leave an inch or so and it will keep on coming.
This is my first year with spinach, too. I planted two types, Space Hybrid and Bloomsdale Longstanding. I can't wait! Hope I didn't plant them too late, so I get a few good harvests before it gets hot!
Well you can always replant in the fall as well.
I tried 3 types this year: scenic (value seeds), space hybrid (??), spinach mix (pinetrees). Scenic is still good, the others bolted by mid may. I planted out 3/11, they sprouted 3/20. I will keep planting scenic from now on - it still looks beautiful. I use scissors to cut lettuce and spinach. I am going to try again this fall.
