This is my first attempt at snow peas and I'm not sure when to harvest them. What I have read so far is that they should be harvested when they are about 3 inches long. I have a couple that are that big, but I was hoping to get a bunch at a time to cook for stir fry. Should I harvest them now and store them until I have enough, or should I leave them on the plants until many reach that size?
When to harvest snow peas?
Pick them before the peas form. The shells get shucky fast. You will soon find the optimum size by trial and error. Snow peas do not give you the leeway of snap peas.
Snow peas will keep pretty well in the fridge for a couple of days until you accumulate enough. The advantage of home-grown snow peas is tenderness, which you will lose if you leave them too long on the vine.
