I planted fall mix greens (kale, spinach) and they didn't do that well. However, they are large and healthy now - if the rain stops I hope to get in the garden to cut these healthy plants to cook - but will they be bitter? The kale is about 8 inches tall. I took a bite and they seemed okay so I would hope they will cook right up and be fine - not biter.
Am I right?

They should be tasty! till it gets hot. Then they will bolt and get bitter. Eat them now!
You're absolutely right. Enjoy them! I had the same experience with the lettuce and the salad last weekend was delicious.
