I have three watermelons on my kitchen floor. How long do they stay good? They are still nice and firm. I was thinking about making some of those watermelon rind pickles. What do you think?
I also have some acorn and butternut squash...about 6 -8 of each. Still good?
Leftover watermelons and squash
The squash should be good until they began to get soft spots. Butternut in partcicular is a good keeper. If the watermelon is firm, the rind should be good for pickles/preserves. There are cultivars that dry up in the centers like pumpkins. Others get watery centers, and these tend to rot in short order. If you cut one and it is dry in the center it should be ok for your purposes. I would cut them outside just in case tho.
