Packing plants for winter?

Brookeville, MD(Zone 7a)

Sorry to post this here but there's like no activity in the cool gardening forum.

How do I wrap up tender plants outside and also a Ginger and Groundnut that I need to overwinter in the garage?

I'm thinking straw might be a good protectent b/c it decomposes slowly for heat but is loose and airy at the same time but wouldn't I then have to wrap the plants in a tarp or something?

For the roots I need to dig up, I have no idea what to use and how to proceed.

Straw acts as a good insulator. What roots are you going to dig up? You're not to far from me.

My pink ginger and my groundnuts. But I was more interested in protecting the shrubs and things like that outside.

We rarely get sub zero temps here. If you have tree roses and things like that, you need to heel those over and protect the graft, otherwise everything does just fine.
