Is any part of this plant edible for humans ?
the cardoon plant
In Georgia, the plant is treated as a perennial. In midsummer, you can gather the leaves together and wrap the stalks with burlap or newspaper for a month. A blanched plant looks like an overgrown celery bunch. Prepare the stalks by removing the fibrous outside skin and strings. Preblanch in lemon to remove the acrid flavor. Add to stews, french fry, steam, or marinate. I found this information in Rodale's all-new Encyclopedia of Organic Gardening.
