Fall Annuals to plant with grasses

I would like to interplant some fall blooming annuals with my grasses which I know willl be dying back soon, I also have a mexican sage, fountain grass some thyme ground cover, day lilies, so i will not have much as you can see once winter comes, any suggestion? Thank you so much!

I always plant pansy ,ornamental kale and cabbage. But being in south Louisiana I wait until the end of Oct. or beginning of Nov. to plant. This allows the weather to cool off some. I start with the pansies a little earlier.
