Spinach, lettuce
Onion sets, garlic, spinach and lettuce (as mentioned above) as well as cabbages, broccoli, collards, kale, turnips and turnip salad, rape, mustard, leeks (plants, not seeds).
You should be able to eat from those items nearly all winter, with the exception of the broccoli which will grow until a severe freeze (but if that happens pick them all the night before, blanch, and put in your freezer!).
