Habanero question

I have never grown habanero peppers before but my son gave me a plant for mother's day this year. Here is a picture of my peppers. My questions are:

1) When are they ready to pick?

2) My sister and I were thinking about making some pepper jam (found several recipes on the internet). Is there an acctual difference between jam that you seal in jars and boil and freezer jam? All the recipes are for sealing in jars. We really want to make a freezer jam.

3) If in answer to #2 there is a difference, does anyone have a good freezer jam recipe that we could use with these peppers?

Yes, there is a difference in freezer jam and canned jam. I've made strawberry freezer jam (almost like eating fresh strawberries!) but never freezer pepper jam. Canned jam has to be cooked but freezer jam does not. You might try posting over in the home canning forum to see if anyone over there happens to have a recipe. Also, I've never grown habaneros but yours look to be about the size I see sold fresh in the grocery store.

These peppers can be picked at any point when they become large enough to use. The flavor changes a bit as they turn colors, but as hot as habs are, unless you are a true 'chili head', all you'll taste is heat.

By picking before they all turn orange, you can force the plant into putting on more blooms, thus, more peppers. Here are a couple of freezer jam recipes....I've done the strawberry and added hot peppers before....it was wonderful.
