Banana Peppers

What's the best way to keep banana peppers nice and fresh? They are coming off the vine faster than I can sell them, eat them or do something with them! Anyone know any good recipes, maybe to pickle them?

Hi Pinger,

If you have freezer space, I think freezing is the easiest way to go for peppers. We slice some and dice some so you can grab whatever you need for a particular recipe. For stir fry I usually cut as many colors as I have into strips and put it into one package. We bought one of those vacumn sealer things but I think a ziplock bag probably works as well.

Have you found any good info? I'd like to do the same thing, but I'm not real sure how to start. Any hints would be appreciated. I just don;t have any place that is the right temperature for my potatoes, root veggies and winter squash. Now that I've grown them, I'd like to get to eat them!

I just pickled my banana peppers. They were the hot ones. I like to use them on subs and other sandwiches. I like the sauce on turnips and other greens.

One of my favorite sweet banana pepper recipes is Stuffed Banana Peppers:

12 sweet banana peppers
1/2 - 1 lb of lean ground beef (or turkey if preferred)
1 small red onion (or white), finely chopped
1 cup shredded monterrey jack cheese
2 eggs
1 cup of milk
1 cup all-purpose flour
salt and pepper to taste

Cut the top and bottom of peppers;remove all seeds and membrane from inside. Wash peppers thoroughly. In a medium bowl, mix together ground beef, onion, shredded cheese, salt and pepper, and 1 egg. Heat about 2 inches of oil in a pan.
In a small bowl, mix together 1 egg and milk. Put the flour in another small bowl.
Stuff the banana peppers with the ground beef mixture. Dip the peppers in the milk mixture, then roll in the flour; dip and roll again. Put peppers in the hot oil and cook until golden brown (3-4 minutes), then let drain in a plate with a paper towel.
Let them cool for a couple minutes, then serve.

This makes a great appetizer or snack, and is delicious!

I pickle them, this makes 2 jars

1/2lb banana peppers, sliced into rings
2cups white vinegar
2/3cup white sugar
1/2tsp mustard seeds
1/2tsp coriander seed

Sterilize jars and rings (I just run them through the dishwasher)

bring vinegar, sugar, and spices to a rolling boil.

fill jars with pepper rings

top with boiling liquid to 1/2 inch from the top

seal jars

drop jars in boiling water for 2 - 3 minutes

let sit for 2 weeks


The only problem I had was the peppers will get mushy if you over process them or if they are over ripe.

P.S. I wouldn't add anything oil based to this to avoid botulism

Sounds good!!
My problem with doing water bath is it gets mushy so i don't eat them so i skip that part and just refrigerate and make sure to consume in few days.

I sterilize my bottles, pack them good and pour boiling pickling mix and seal. after it is cool I place them in refrigerator/ That's how I do my okra also. I buy the pickling mix from a meat packing place here in Virginia Beach. Kind of pricey but good.
