Bannana Peppers

My son bought me a bannana pepper plant for Mother's day. The bigger peppers are now about 5"-6" long and a slightly greenish yellow. How do I know when they are ready to pick and what can I do with them?

If they are Sweet Banana, they are usually used immature. Pickled is my favorite, but you can use in salads etc. They can be picked whenever they are large enuff for your use. Left to ripen, they turn red.

Farmerdill, if left on the vine and peppers turn red, are they still sweet?

I prefer them immature, but I also don't like ripe bell peppers as well as green ones. Some folks say they are sweeter, but flavor of a ripe pepper is a bit different. You will have to decide for yourself which you prefer.
