How do I harvest and store my sun flower seeds?

Hello,
I have planted a whole bunch of sunflowers and they are all starting to bloom; when and how do I go about harvesting their seeds and how do I store them til next spring?

I can say what I have done. I let the heads stay on the plant as long as they can - that depends on birds and squirrels of course, then you can harvest the seeds or if they are not fully dry cut the head off and bring inside to dry longer.
