I think the real problem is that your climate is not really suitable for cherries and your plant is basically frying in the sun. If you're going to try them, you will probably need to plant the tree somewhere different where it gets some shade during the hottest part of the day. Most "full sun" plants that aren't desert natives are going to be the same way, they might be fine in full sun in a cooler or more humid climate, but in yours they'll need afternoon shade. Also, if you're hoping to get cherries, I think you'll need a second tree, I don't think the Bing cherries are self-fertile.
