My wife is growing several type of veggies but the one book we have is not very helpful about when to harvest. The squash SEEMS large enough to harvest - but how do we know?
Also, does someone have a link to a guide or other info on when to harvest common veggies?

When to harvest yellow squash
I'd say you can harvest any of the summer squashes as soon as you can find them :). The biggest thing around is the "baby vegetable" craze. They sell for lots of money (read $5.00 a pound here) and taste wonderful. For that matter, there are people who fry the blossoms! Don't worry about overharvesting, the more you take, the more they produce. When they get too big, they lose flavor and texture, so go get 'em!
