how about the little corn you see in Chinese food? I have seen seed for it and think that would be a fun veggie to grow but I wonder if you would have to grow it away from the other corn so they wouldn't cross pollinate. I remember being told you do need to follow that regimen when growing popcorn.
Farmerdill, Shoe, Fleurs, what do you know about baby corn?
Have you ever fixed little tiny summer squashes by steaming like zucchinis. Yummy, it must be getting close to suppertime around here as I am thinking food.
Speaking of baby veggies,
This article sums up more than I know. I would have gone for multi-eared corn like six shooter, But this trial indicates two ears per stalk is optimum. I really don't care for it, and will probably never experiment with it.

Pretty good article, Farmerdill! I guess we could always pull a few ears of sweet corn at an earlier stage, eh, just to sample it?
Lenjo, looks like something easy to do, you gonna give it a try?
Shoe
I am like you, Shoe, maybe I will just pull a few early and see what that is like. In the last few years there has been an explosion of new varieties the farmers raise around here for the canneries. All the various supersweet varieties but before those came out they raised almost exclusively a variety called
Golden Jubilee and that is still the variety my dh plants and the only one he still plants. So I guess I will look for some of those other varieties listed in the article you posted, Farmerdill.
Shoe, do you can or freeze corn?
I think "jubilee" was one mentioned in the article...think it is the same as Golden Jubilee?
And yes, I freeze corn, haven't canned it for a number of years. I'm too lazy for certain things. I prefer to freeze corn as well as okra, sometimes tomatoes (whole), and also some of our beans (still like canning some of the beans though!)
Shoe
You freeze tomatoes? How do they taste? I can whole ones and make sauce too. Wow, it is long way for us till tomato season but oh there is nothing better. Mmmmm. My mouth is watering just thinking of it.
I can beans too. Frozen beans somehow just don't taste as good as canned. And we make a few dilly beans too. I have raised a few filet beans too, one variety was called Nickel beans. They are so yummy and tender; steam em whole. I can;t wait for the veggie garden this year. Last year hubby planted
English peas again and they were pretty good. Usually I have two legged "grazers" and so I don't always get enough to freeze but the nest is empty now so I have a better chance to harvest some stuff.
I stumbled on this old thread while looking for information about Six Shooter. (By the way, I'm inclined to agree with Farmerdill that Six Shooter would be a good variety to consider for specifically producing baby corn.)
The link to the Univ. of Washington article is broken, though. Anybody still interested in the topic can find (a possibly updated version of) the article at:

petronius, glad you bumped this up...
Since 2007 I've grown baby corn twice. I found out that "Chires Baby Corn" is the corn of choice, or so it seems. It is a smaller growing plant than most standard sweet and field corns, produces more than two cobs per stalk. Now that I'm reminded of it I think I'll plant some more this year.
All my pics of that first year (2009) are here:
