Ok here is a drink called atole. It is made out of corn starch. This was a nut flavoed one. It really is very good.

I will see if I can come up with recipes. It might take a while sine none of my Sil's ever using them. It is all done by memory. (they are very amused that this gringo is always asking them to explain to my husband amounts so I can right it down) ( he also has to translate since none of them speak any English)
Posole is spicy but we usually add a really hot salsa at the table that way everyone can spice it to there liking.
Marie, it looks spicy! Looks like your SIL's are very good cooks.

Should be nice 70-80's during the day and mid40-50's at night. Yes all of my Sil's are great cooks!! Where are you staying in Scottsdale?
The Fairmont Hotel. It's a business meeting and I'm going with my DH. Looks like a nice place! They have some daytime outings scheduled for the spouses and dinners, etc. in the evenings. I've never been to Scottsdale and didn't have a clue how to pack. Didn't realize it would be that warm during the day, but did expect it to be cool at night. Thanks!
The Fairmont is awesome and Scottsdale has all the upscale shopping and restaurants. If you have the chance the Roaring Fork has the best mac and cheese around!! (has jalepenos in it and the chef is know for his version)

Marie, almost all of that looks delicious. The drink you'd have to convince me on. It probably does taste really good, but it looks like gravy and that's what's stuck in my head. LOL! ;)
Herbie...That village and Christmas tree....Holy cow. That's beautiful to behold! Looks like you had a great new year's eve. Howie and I watched a movie until the "On Demand" flaked out on us and we couldn't resume the movie and see its end. We zonked out by 10:30pm.

Ok the atole comes in a packet. Kinda like Kool-aid. If you do not have it in your area and want to try it let me know I would be happy to send some out.
The rice is made like you normally do but do not use water use chicken broth and add a little cilantro to the pot while cooking.
Chicken flautas are pretty easy.
ingredients needed are : cooked shredded chicken (you can use the left overs from one of those rotissere chicken from the grocery store), corn tortillas and some oil
Take a stack of corn tortillas and wrap in a kitchen towel you have soaked in water and then wrung out. Put the kitchen towell with the tortillas into a microwave oven for 2-3 minutes. Take them out of the microwave and unwrap. Be careful you can easily get a steam burn if not. Heat your cooking oil in a pan at least 11/2 to 2 inches deep.
Take a corn tortilla and lay it on a flat surface ,take some of your cooked chicken and place it on the edge of the tortilla and roll the tortilla (does that make sense?) then put a tooth pick into the rolled corn tortilla to secure. then you drop it into the hot oil and fry until crispy turning as needed. We typically top them with guacamole, lettuce, sour cream & cheese. ( sorry if these are confusing you could probably go to the website for Rick Bayless and maybe get better instructions.)
I do not know how the avacado salsa I pictures is made but I have an idea. Once I have a chance to have my husband ask my Sil I will post it. Same with Posole. She makes her just a little different than most of the recipes for it.

I bet the international section at Giant Eagle has a lot of the things you mention. We'll have to check that out.
gardenwife they probably do. I always forget about that section since I usually shop at Food City which carries more mexican products than american. The atole is very much like a hot chocolate kinda creamy depending on how thick you like it. I am originally from PIttsburgh. Do not know with my current food tastes if I could live there again.
roadrunner - if you have the pizzelle maker how cme you don't have the recipe for them.?? LOL will d-mail it to you asap.
I have one to Herbie can you please d-mail it to me. My birth mom used to make them when I was small but she passed away and I have not found a recipe that I like yet.
