Harvesting romaine lettuce

OK...so I have all of this beautiful romain lettuce. I was told to cut it when it's hot and cut just what I need and that new shoots will grow. Is this true? Or do I harvest all at once?

"Cut it when it's hot"? Not. Lettuce is best harvested in early morning, before the sun gets on it. However, if you should cut it late day (not mid-day) you should then "hydro-cool" it (a fancy word for "dunk it in a bucket/sink full of cold water).

For Romaine, it is not a leaf lettuce but rather a head lettuce and you should pick the whole head. What someone told you about picking the "leaves as you need them" is only true with leaf lettuces.

actually, I have grown all kinds of lettuce, heading and not, and harvest outer leaves as I need them--no problem to do this, as the smaller leaves are more tender anyway. After awhile, depending on weather, the lettuce plant will get tall and/or bolt--then I pull out the plant and reseed (better luck with reseeding many types toward the end of summer when weather cools a bit, but I try from July on)
