Can I use grass clippings to mulch around veggie plants to conserve moisture or is that not a good idea because it might mold? What else could I use?

Yes, you can use grass clippings. They will burn the plants if you get them too close though. I usually leave a few inches between the plants and the grass clippings and after a week or two when they are drier I spread them a little closer to the plants.
I try to mulch my entire garden around the end of may with all the grass clippings and leaf mulch that I can find.
I put down several layers of newspaper first and then you have no grass or weeds at all. I use straw instead of clippings because I don't want the grass seed germinating.
You can burn it off at the end of the season tho and it will kill most of the seeds.
If you let the grass dry out for a day or two before raking it off of the lawn you will have grass hay and a great mulch (as long as there are no seed heads in the graas). If you mow weekly there is slim chance of seeds being in the grass.
Obvisouly make sure there has been no pestides or weed kileers sprayed on the grass.
