Grassy weed help

Help: I've been at war for about 3 years with a weed that looks like a grass. It is unbelievably persistent in my herb/veggie garden. Over the last year I have started to decrease its span, but its still a real pain. The grass has long white roots (2-6") that end at a red bulbous pod (about the size of a b-b up to the size of a marble). If you don't dig down to remove the red mini-bulb it just comes right back. Short of removing every single bulb by hand (there must be thousands) or detonating a small nuclear device (though they'd probably survive that too), I am struugling with what to do. I try to stay as organic as possible in the veggie garden, but desperate times call for desperate measures. Any help ID'ing this and/or advice on removing it would be helpful.

Chances are it's a sedge or nutgrass. Do the leaves have a prominant mid-rib and thick edges? Unfortunately, if it is a sedge, then grass specific herbicides won't help. Some lawn weed killers will kill it, you'll have to check the labels.

Yes, you do have to get the bulb up to kill it, although just removing the green parts will EVENTUALLY kill it.

Yep. You hit the nail on the head with the nutgrass ID . Looked it up on the internet. Listed as the world's worst weed in the Guinness Book of World's Records. Great.
