Edible Gardens

Northeast, AR(Zone 7a)

After my scare with cancer, I'm determined to live healthier. And one way I wanna accomplish that is by growing my own foods. I just sowed tons of different tomatoes and peppers. And I'll be growing some okra, along with edible amaranthus and edible flowers like nasturtiums and daylilies.

What's the best cucumber to grow for salads and for canning? And what else, veggie or flower, can I easily grow and eat? Any suggestions? I'm afraid I'm really clueless. For years, I've been a junkfood junky. (Boy, doesn't that term give away my age!)

So what are some of your favorite things to grow. I'm going to grow a vining spinach too that I've been told is edible. Know anything about it? Do you put it in salads?

Help this veggie newbie please!

Hi NancyAnn, You will feel better right away eating any of your own fresh veggies in place of junk food. You can't can cucumbers unless you make them into pickles, but they are are good in salads. Just read the catalogs or browse your local feed and seed store and see what appeals to you. The spinach you mentioned sounds like malabar spinach. I've never grown it but my understanding is it's not a true spinach but will produce greens on a vine all summer. There is probably someone on DG that has grown it and can give you better info on it. Tomatoes are the most popular home grown veggie so join in and enjoy some good eating.
Good luck!
