Sap Season

Living in the northeast ,you know spring is just around the corner when the maple season starts. Today we tapped some trees and expect to get a small run . The weather has been unseasonably cold for the begining of March and the garden is full of snow.
can't wait to start a cold frame or two!!!!!!!!!!!!!

I've never had fresh maple syrup. I bet it is fun to tap trees, hope to get to do that at least once in my lifetime :-).Living in the sugar cane belt, all we get is fresh sugar cane back strap.

It is fun Lisa, the first time you do it, and if you are a kid possibly the second time. Other than collecting the sap it is a pretty boring job. We had a huge sugar bush and used to go together with the next farmer. We had the bush, he had the equipment.
It was done the old fashioned way with no tubing. We would take the horses and the wagon out and empty the sap buckets into huge tubs, The actual boiling down was a VERY boring process with the exception of when it was TIME!! Still, no matter what, you cannot beat the taste of the syrup.

Sounds neat...we have sorghum here...I kinda figured that Lisa might also.

There is one place locally that crushes and boils sorghum...one weekend a year. You have to go and sit and wait for the molasses...they take no orders...it's first come first served. Cars lined up all along the road and people waiting.
