Is there some place I can find a list for what seeds need stratification and what method? And/or what seeds need to be fall/winter sown?

Glad you enjoyed the wintersowing site. Did you click on the zone 8,9, & 10 growing areas? Trudi, author of that website, calls it the "hot zone" and has a list of seeds that grow every well using the wintersowing method.

For seeds that need to be stratisfied, the link that Terry gave you to the Tom Clothier website is excellent. I've also used that one and it gives very good instructions for germinating specific types of seeds. I'm not as familiar with the Thompson-Morgan site, so I'm going to check that one out!

Tom Clothier's is my favorite and very inclusive of most things I have looked up. I took the time to save it as a word doc, rescale it and print it. That way I am able to carry it around with me, write on it, not worry if I get it wet or dirty, etc.

I don't know your skill level, or your low temps right now, but you may be able to skip chilling some things by sowing them outside now.
