hi, woodspirit--to tell the whole truth, I purchased the crab cakes at the fish market and made the orange hollandaise according to Ogden's recipe.

But, if I do it again I will just make regular hollandaise sauce or try the bernaise you suggested....that would be more interesting, I think. Good luck. t.
