Who could ask for anything more?
Fresh roots, just dug from the garden, grated, mixed with sliced pickled beets; then, along with baked ham and fresh, hard crusted, rye bread. I can't think of a better way to salute my last "crop" of the year.

Shakemh..... When is the best time to dig the roots? Can you do it in the spring?
Be advised that it can be invasive. The taste is worth it. : )
I dig mine in the Fall after the leaves have browned and died back.
