tell ya what, next time I venture out to the meat market, I'll pick up a link and send you a picture of it Shoe. It is good, just oh so bad for you..lots of "badies" in it. I gave up eating it some time ago..clogs up the plumbing(and I don't mean the outside plubming..)Stuff used? everything from chicken lips to pig intestines.

Actually, there is a meat market that process Nutria meat since a bounty has been put on their heads. They are making Nutria jerky and sausage. I haven't tried it yet though. I do however remember my dad one cooking on the pit when I was little, I am sure I ate some at one point in my life. When yer hungry, you eat anything..lol.
Hmmm...methinks I'd go for the nutria before I chose that boudin...

It scares me half to death! Why anyone would want to eat the very things which are known to carry all the trouble making substances in a living body is a total mystery to me. But I do know there are at least as many people who love it as there are who won't eat anything from an animal. Not a vegetarian, but I just can't bring myself to eat some things, like the lining of stomachs or anything made from blood.

Yummy! I ate some last Friday.. I ordered 3 lbs from Kitchen Cajun Chef here in Sulphur But it doesn't taste as good as one I went to in New Iberia.. They tasted better than here!!!!

Bud, now my idea of a well balanced diet is a 50#sack of crawfish, corn, potatoes,garlic, onions, bell pepper and celery...King Cake for after and a nice cold Barqs Root Beer ..

rootdocter, just curious..how did you cook your boudin? We put a little bit of water in a skillet and then cover it and let it simmer until it is cooked.

It just happened that guys at the garage had brought it up that morning,I just couldn't remember the name,one guy said to cook it make sure to use tinfoil with it because the casing splits,so I tossed it on the grill with foil,The ones I had were twisted short like brats,I haven't noticed any plumbing problems,LOL,guess it takes awhile to slow my arteries.LOL,I'm ready for more!
Shoe soon as I get this load of Rabbit beans out of the back of the truck,I'll fire it you and come get ya!HMMM from Kc it would have to be Ribs,I'll run down and pick up a heifer so we can do ribs and we just might have enough lips an things left over to fill some of them casings your bringing,If not we'll fire up the pee-row and gig us some frogs!I've got a mighty big hankering for some corn on the cob,want to try out this 10gl steamer I just got,I was hopin you'd say you got that landyacht on Ebay an we could toss ole bessie in the back of it.:)

Oh, now, that changes the picture totally! I want to help with the frogs, and I can be a great taster. I'll even clean them and bread them and toss them in the pan. I read that it keeps your arteries unclogged. In moderation, of course. And some good pecan pralines for munching on later while we sip some strong black coffee. Anybody caught any bream lately? I will clean them and fry them up if you have any. What a lovely platter it makes, all that crisp fish and frogs.
