I canned some cucumber/veggie relish last summer (probably September) and it’s been open in the fridge since then… I ate some a few months ago and it was good, but I was thinking about eating some tonight and thought I should check the best practices around food keeping first. My thought is it’s probably fine since it’s mostly vinegar, but I may be pushing that logic too far. When I googled it I saw everything from 2 weeks to 9 months in the fridge, so not sure what the right answer is. https://9apps.ooo/

I've had some that long and it's fine. The vinegar base keeps things safe. (long time canner and food preserver here)
