I want to take as many of the largest cuttings i can from this tree as it’s too large to move off my patio. What’s the largest cutting I can take and how many can I take without harming it? Do I start at the top or bottom?

Looks like an euphoribia. There are a few that very similar and I am no expert to ID like Euphorbia abyssinica

I think yours might be Euphorbia ingens.
Plus there are so many synonyms hard to keep them all straight.
They are easy to propagate regardless of which one it is. Google "propagate Euphorbia ingens" and a ton of videos and articles will pop up.
I generally water any plant well the day or 2 before I cut it so the cuttings are well hydrated before separated from its water source. Generally you would just cut off the segments starting from the top. Let the end callous for about 1 or 2 weeks out of the sun. Then stick it in very fast draining soil or cactus mix, cut side down. Wait about 2 weeks for it to start to root then water as needed though in winter it will need less water.
Use sterilized clippers or knife. Wear gloves and do not touch your eyes. It will bleed latex, a milky sap, that is harmful to the eyes and skin.
Generally plants do better being propagated in spring and early summer as the plant is getting the message to grow so it quickly adapts to being cut off. As the days shorten and the it gets cooler, the plant is getting the message to slow down.
