I live in zone 5 - can I plant spring bulbs in a container that will stay outside all winter?

You can, but they will be much colder in a pot than in the ground, so some might not survive. For best results, the pots should have at least some protection. You can bury them in the ground or keep them in a cold place that still is warmer than the outdoors, such as an unheated attached garage.
I often put ones I am forcing inside double boxes under a table on our unheated but partially enclosed front porch. That sometimes works and sometimes not!
