Hi all, new to planting parsnips. I planted Harris model on 4-23-19 and they came up on 5-8-19. These were planted in raised bed with great soil and they look plenty big enough to pick. Frost is still about 90 days away and I don't want them to get woody. I've read that frost makes them sweeter. Any help is appreciated. Thanks Mac
When to harvest parsnips
Depending on the variety you planted, they won't get woody. You can even leave them in the ground all winter.
