I really can't tell from your pictures but it reminds me of caterpillar feces though more than I have ever seen. LOL . I would try using B.T. It is not a poison to people or other insects. If it isn't caterpillar damage, it won't hurt anything and you can then try a general systemic on it.

Amaranth leaves are very much edible and a good nutrition source in their own right.
I think plant bugs had caused serious damage to your amaranth leaves. You should apply a layer of mulch will help to prevent weeds and conserve soil moisture.
Vincent rose, it would be cheaper to toss the plant and buy 100 more rather than pay for pest control for a caterpillar.
