djm906 your welcome and I do believe I have heard of a candied orange, not sure if it was the peel but I will be checking for you. I am glad that you found the recipes that you wanted there plus a few extra's.

Baa I think I know what your talking about, I think it is the same thing that djm is talking about only with small chuncks of oranges.
I have some old cook books from the 1950's that might have some of these recipes, I'll let you know tomorrow evening.

We use to make candied orange peel - it was quite a treat, we loved it as children, and it had been so long since I had had it, then mother in law who cant bear to throw much out, started making orange marmalade when she ate an orange, then onto candied peel, there's only so much orange marmalade you can keep around.... she just boils them in a sugar water syrup, I use to have a recipe, I'll try to look for it.

Baa I am not sure what recipe your looking for but I don't think that I have any for yams that has a clear sauce, I am sorry but! in the event that I run into one I will let you know.

Oh my goodness tink no worries about help eating all that wonderful food, my OB will eat,and snack you out of house and home...please believe me that boy is a PIG pig(said the way it's stated in Animal House). I will of course have to test it out just to make sure that you didn't forget anything lol. That means everything you cook, I will be the food inspector, if I happened to eat up all of one dish then it's just because I wanted to be sure and not that I am bloody greedy lol. After all I have a reputation to protect and can't let it be known that I am also a P.I.G.
In my case the P.I.G. stands for Person Investingating Gourmae cooking, (hope I spelled that right)lol

Baa, I have numerous cookbooks, and many of them have candied yams or sweet potatoes, including suggestions for variations. Some have orange in one or another form, some have brown sugar, some use maple syrup. If you want me to e-mail you some of these recipes, I will be happy to do so, but I don't think I should put them here. Your description sounds like what I call glazed yams, but could also be candied. Most of these are baked with the glaze or sauce after boiling. You can also use canned yams to save time.

Thanks, we don't have things like canned yams here. We do get a great selection of vegetables and fruit from around the world (its a huge benefit of being part of the commonwealth) so anything with fresh veg is great.

ATTENTION FLORIDIAN!!!!
I have found your recipe and it was in one of my books that I bought from the library, well anyway here it goes:

COQ AU VIN
1 frying chicken(about 3 lbs) cut up
1/4 cup butter
8 small boiling onions,peeled
8 small carrots, scraped
1 garlic clove, minced
2 Tbs all-purpose flour
2 cups of dry red wine
1 small bay leaf
1 Tbs minced parsley
1/4 tsp each of ground savory and thyme
1 can(4oz)button mushrooms
1 1/2 tsp salt
1/4 tsp pepper

Cut chicken into quarters, or smaller pieces if you prefer.
Remove the spinal cord and neck to improve apperance of the breast. Melt butter in a skillet and brown chicken pieces over medium heat. Remove chicken pieces to a plate and set aside. Put onions and carrots in the skillet. Brown very lightyl. Add garlic. Stir in flour,then gradually stir in wine. When wine is well blended,add bay leaf, parsley,savory, and thyme. Pour in liquid from can of mushrooms; add salt and pepper. Return chicken to pan and add mushrooms. Cover and simmer slowly for 20 to 30 minutes, or until chicken and vegetables are tender. Serve with mashed potatoes. Makes 3 or 4 servings
NOTE: The better the wine, the better the dish!

I was looking for a creamed chicken recipe in one of the books when I found this and I was so happy that I dropped everything to give you this recipe before I could forget which book it was in lol.
I have never worked so hard to find a recipe in all of my life and it was right under my nose all the time...go figure!
