Today I found dozens of"worms" denuding lumbs of my native persimmon.
Are these butterfly larvae that I should leave alone or some other pest?

A little late but for next time, this looks like young Redhumped Caterpillars - Schizura concinna, a moth. Here is a nice fact sheet from the Univ of California. Look on page two for a picture of the younger caterpillars matching your photo.
