Today, I found this thistle-like plant, on the edge of a canal in the Alsace, France. Any ideas what it is?

I believe it's Dipsacus fullonum (Teasel Weed) or a close relative.
Hi.
I grew those in zone 5. I concur with Cville_Gardener: dipsacus. I grew dipsacus laciniatus. It was a wonderful perennial, grew to 7 or 8 feet tall and the yellow finches would perch on the vertical spikes surrounding the seedheads and feed on them. Were it not for the finches, we would have been invaded by dipsacus in short order. It is a vigorous grower, a clumper rather than a runner. Mine grew in full sun, clay soil with an occasional shot of Micracle Gro. They are not fussy. In the fall, I left the canes standing throughout our horrible winters and cut them down when the snow melted. They added a point of interest in our winter landscape, next to a few clumps of miscanthus grasses.
