My tomatoes are about 9-10 inches high, and have about 10 true leaves. The first flower truss has appeared on many of them, and I'm wondering whether I should pinch them off, so that the plants develop more before flowering and fruiting, or if I should leave them. We have a pretty long warm season, so that's not a problem here.

you may could leave them on if they were cherry tomatoes, but i personally would not trust a plant that small to the weight of a larger type of tomato.
I would pinch the flowers to allow the plant more time to get established. Another bloom cycle should start in abt 3 weeks and by then the plant should be ready.
I pinch mine back because I want stronger plants prior to the fruits forming.
