In the early years I would thin the fruit so a new Citrus might only bear 1-2 the first year, a couple of more the second year. Let their energy go to developing better roots and trunk.
After that you do not need to, but you would probably get bigger fruit if you did. Even less necessary with smaller Citrus like Kumquat.

When is the best time to lower grapefruit trees? can I cut back at least half?
Citrus do not like to be cut that hard. I would work on it over several years, perhaps heavily pruning no more than 1/4 of it each year.
Do this pruning so the growth response will not get frosted in the winter. Spring and early summer is best.
The leaves that are on the tree now are shading the trunk and main branches from the sun. When you prune it heavily protect the exposed bark from sunburn, probably with white paint.
