Hi,
I just recently picked some ripe Elderberries from a wild Elderberry bush in Central PA. In past years a friend has picked elderberries from the same bush and made a wonderfully delicious jelly from it. I picked the berries this year when black and not yet wrinkly. They are very bitter with no te sweetness to them. Any ideas why this could be. I know they are ripe from the color and they passed the water test, i.e., they sank to the bottom of a water filled vessel. Second related question is - is there anything I can make from these bitter berries?

Why are elderberries in Central PA so bitter?
Perhaps different weather through the year has affected them? Was this past winter worse or milder than normal? Has the summer been cooler than average?
