purple cauliflower

I picked some of my cauliflower but left the ones that werent quite as big as the rest but now the heads are turning purple-ish. Does that mean they are no longer good? or are they supposed to turn purple? This is my 1st year growing cauliflower so I wasn't quite sure if that is ok or not.

The purplish tinge is something that they naturally do when they get tons of light. genetically, many cauliflowers tend toward purple, red, or blue pigments. When a lot of light hits the developing heads of these cauliflowers, we start to see a purplish tinge form along the edges of the heads. It's still perfectly edible, but may have a slightly "off" flavor -- raw eating is best in this case, because cooking will only increase the off flavor of the affected curds.

giving them some bit of shade should help with stopping the coloring from progressing
