Here we go, I had a 4 cup container of roasted turkey saved in the freezer, a bag of Birdseye mixed veggies, a can of Cambell's cream of musroom soup, a packet of gravy mix, and a box of pie crust. I threw it all in a mixing bowl packed it into a deep dish pie plate and here's the result. Oh, I did bake it at 400*F for 1 hour, prep time was only about 15-20 mins.

Somebody at work organized an impromptu Breakfast Potluck. I was working upstairs in a lab since 0600 this morning, came back down to the office for lunch and saw all the leftovers. Yippee, no overpriced no variety cafeteria food for me today. Nice surprise - quiche, muffins, fruit.

Quiche has been popular here lately. But chicken soup was the order of the day for the boys. One on week two of some sort of gunk, and the other a nice congested head...

Mark and I had leftover pork roast, box cornbread stuffing, canned green beans, applesauce. Nothing to write home about, got me in and out of the kitchen in a tolerable time anyway.

We had roasted chicken, mashed potatoes, gravy, frozen sweet corn, and since the oven was on cheese and garlic biscuits. Easy prep, the chicken was a tad dry, I got carried away in the GH.LOL
One of our local grocers, Karns foods, had a special, $.88/# roasters, I'm stopping by tomorrow to get 2-3 more for the freezer. I'll probably get more ham too, $1/#.

I made chicken Marsala the other night (with salad and dinner rolls) and, while the chicken Marsala turned out very tasty, I just couldn't seem to get the sauce to thicken, like an emulsion like the recipe says. Do any of you make chicken Marsala? How do you get your sauce slightly thickened? I'm wondering if maybe my skillet wasn't big enough. I don't have any bigger ones than I used, so maybe I could/should have split the batch into 2 skillets... I dunno. Anyway, thin sauce or no, it was yummy!

Chicken palooza!
I can't help on the marsala.
I made chicken fricassee, or what I call chicken fricassee. Onion, celery, carrots, chicken breasts on bone, simmer. Then take chicken out and thicken the broth with flour and milk. Pull chicken off bone and return. So it's in a cream gravy I guess you say, like a pot pie without crust. I served over bulgur because I was all out of rice.

I got a salmon filet out of the freezer yesterday and will make that with packaged mushroom risotto, and lima beans I guess. No maybe spinach. Darn, wish I did the limas yesterday with pasta and sausage, and saved zucchini for today.

Speedie, When I make chicken Marsala, the sauce is about the consistency of Alfredo, if you need to thicken it you can either reduce it or add a little Asiago. If it's thick and you want to make it slip better add a little EVOO.:-}

I did use sauerkraut mixed with applesauce and cinnamon and nutmeg. Had some sweet potatoes, so cooked them up mixed with a little crushed pineapple. And green beans. Just roasted the tenderloin. Very quick, cuz I went to watch a girls' basketball game.

Oh Jan that sounds sooooooo yummy!!! I love sweet potatoes baked (like a 'regular' baked potato), but I always 'ruin' them by treating them like a baked potato too: BUTTER. < =/ Adding crushed pineapple sounds really great - I bet even some pecans added would be a nice treat as well! Can't wait to get these braces off! =)

Ric, so your Marsala just "comes out" thick like that? That's rather what I was expecting... either I floured the chicken too lightly, or I simply need to do smaller batches, I think. I did 4 breasts and all those 'shrooms in just the 1 pan... next time I will split it up between 2 10-inch skillets, that should help.
Would you mind sharing your recipe please? I'm sure I can learn something good from it. :)

Went Thai with friends, last night. Very good.
Speedie, I pound my chicken thin, dredge in well seasoned flour, and saute in EVOO and butter,with sweet onion. Setting the the meat aside, I add about 1/2 cup of Marsala, you can also add 1/3 cup of sherry, if you like. Simmering to reduce the liquid, add 1/2 cup half & half, milk and cream are fine, return the meat to the sauce, add mushrooms (I don't like mushrooms overcooked) and chopped green onions for color if you like, simmer a bit and serve. I usually serve on a platter over the pasta, add a little garnish and it presents itself. If your sauce is too thick (rare) add a little EVOO to make it slippery, too thin, I add a little grated Asiago.

Ric, thank you a ton, that is a BIG help. I did most of what you described (like pounding the chicken thin, setting it aside after browning), however, I used only EVOO for browning, no butter; I used 1 cup of Marsala, and no cream of any sort. Oh, and I added butter at the very end, directly before serving. I will use your instructions the next time I make it, thank you. :)

Judy -- peanut butter and Jelly hot wings!? Wow, that is NOT a combo I would normally think of when thinking of hot wings, Hahahaaa!! Definitely gonna have to check that one out.

I just love it when grocery stores give me things. Our local Giant Foods also have gas stations and give bonus points and run bonus specials of all kinds. One of this weeks specials was buy 7 and get $.40 off per gallon up to 30 gallons a $12.00 value. One of the items was $.88 cans of tuna, so you buy $6.16 of tuna and they give you $5.84 in gas free. I already had 120 points, today I earned another 120, I just got 30 gallons of gas for $37.77. Midweek is when I like to shop for discount meats, and almost always find a few at 1/2 off.

I like Weis on Monday mornings for the coupons stickers on the meat.
Yesterday I 'liked' Wegmans for a sample of really good coffee, and then lunch from the veggie hot bar- spinach-feta flan, stuffed portobello, zucchini. I don't think you get many bargain at Wegmans but you can find all sorts of fun yummy things to buy.

I definitely know what you mean Sally, I avoid Wegman's, it's bad for my budget. LOL One of the best and costliest meals Holly has made, (not counting Thanksgiving) was when she was watching and tasting a demo, then bought all the suggested ingredients and brought them home to make. It was exceptional, I'm glad she was only cooking for two. " Wild caught" halibut sauteed with asparagus.
The best part was why she was there, to pick-up cupcakes for something at Jen's school, which weren't quite ready. If they can make Holly want to cook, impulse buyers beware, although I really did enjoy it.

I went to Zumba yesterday and some of the songs were perkin in my head so here I am listening to line dance songs! Restful- not! I should have gotten into them much earlier and gottten tired out.
I went to Wegmans to buy Jaffa cakes, a British cookie type thing my younger son says are delicious.

Making chicken curry over rice, and spinach, next dinner. Tomorrow, which is today...lol

ROTFL When we were going to the Bahamas regularly I thought I could Macarena. There was this little guy there who could do it better with a bottle of Heineken sitting on top of his head. He was about 5'8", with a six-pack, and very popular with all the cruise babes.LOL

I heard one time that Wegmens is actually cheaper than the other main grocery stores if you are buying their name brand for regular grocery staples. It is their specialty stuff in all those wonderful eatery stations that gets pricey.

no one is cheaper than ALDI for basic supplies. But selection is very limited other than basics. It would not be hard for Wegmans to be cheaper than Safeway in many things, if my limited visits to Severna Park Safeway are a good sampling.

We thought about eating out after the the show in York this evening but every restaurant we passed was packed so we came on home to baked potatoes, chopped salad, and haddock filets I got on a BOGO last week. Mmmmm, with a dish like that I'd think corn bread would be perfect... with chunks of corn and diced jalepeños in it! ... man, now I'm hungry.

I think we'll be doing simple steaks, baked taters, and salad for dinner tonight. Last night was chicken cordon bleu, but I cheated and used pre-breaded chicken breasts, so they weren't as good as my 'truly' homemade ones. I don't think I'll be cheating like that again.
