I have 2 amaryllis that I have pollinated with their own pollen. Why can't I call the resulting seeds by the same name? Why are they called (for example) 'White Christmas' x 'White Christmas' or 'White Christmas' selfs?

I think self works for most hybrids. I've also heard the term grex.

Thanks. Now I know what grex means. But why can't I just call the seeds 'White Christmas' and sell or trade them as such? Will they come out the same as the mother plant?
Just call them White Xmas selfed or seeds from White Xmas.
