Growing espalier trees

Hi all,
I have space for 9 espalier trees which I will support with wires along a fence. I don't have a lot of choice in my area, out of the following which trees will grow best as espaliers?

Apples: golden delicious, starking, gala, granny smith and reinetta (used as a cooking apple here)
Plums: red - Stanley, yellow - Japanese gold and greengage - Claudia.
