Not sure what is causing the browning/drying of the leaves???

The irregular brown might be from any of several things.

First, are you sure it is spider mite? Thrips can cause similar damage (yellow stippled leaves).

Scorched leaves:
1) Edges: Most often lack of water or high salts in the water. Commercial fertilizer is usually a salt. If your water quality is poor (high in sodium or certain other elements), that could do this. I would try deep soaking a few times, just in case there is a build up of something in the soil. Hope it is not something in the water.

2) Mid-leaf: Often sunburn. Especially if the soil it dry then a heat wave strikes. I would deep soak, then test to see how soon the plants need more water. This will vary with temperature, soil type and age of the plant.

3) Combined, whole leaf (or most of it) browns, curls, gets crunchy. Lack of water.

These 'lack of water' types of issues are not always an actual lack of water in the soil. I do not see it on your plants, but borers can hollow out a stem, and this stops the water flow, so the whole stem from where the borer was feeding, on out, dies.
Vascular diseases can also reduce the flow of water through the plant, so various amounts of leaf and stem death happen. There are several diseases, and the symptoms are similar.
Pests in the soil can eat the roots, then the roots are not there to take up water. From as small as nematodes to as large as gophers there are quite a few soil pests that could do this.

Ya im sure I have spider mites, I have them everywhere. Hmmm. it has been a really rainy season.. but it also got reallllly hot for about a week. It was in the upper 90s for a week in mid june. They might be sun burnt. Thanks!

If the weather changes quickly the plants can sunburn. I have seen it here, too when summer hits from one day to the next.
