My cherry tree is well established,I guess about 12/20years old,it was here when we moved in about 4 years ago. My question is,as its about 15 foot tall and all the branches are stretching upwards, is there a way that I can prune it so that its shorter? Its hard to cover against the birds when the fruit arrives! If so, when would be the time to prune it?

Ask the local extension office or agriculture office the best time to prune. There may be some local disease that is more active or less active at some time through the year, and that will dictate optimum pruning time.
I would rotate through the tree, perhaps on a 5 year plan, to shorten roughly 20% of the branches each year so that over time it will come back into the size range you want. Then continue that rotation to keep it that size.
