I made our Easter dinner today with the family. We had....

Ham, Prime Rib
Mashed taters, sweet taters
Brussel sprouts, corn, yeast rolls
fresh fruit platter: pineapple, black berries, strawberries, watermelon
veggie tray, chips & dips
apple pie, (vanilla ice cream) lemon meringue pie, blackberry cheesecake, and pink lemon aide cookies.

yes Jen.. well it fell apart again :(

but it will be a trifle .. she loved it last time.. she said it was the closest tasting GF cake she ever had.. wouldn't know it was GF other than it sticks like a mother to pan & doesn't hold together.. it took almost double the normal cook time as well.. I even used my silicone bunt pan.. it still stuck real bad.. I tried a few pieces last night.. it's really good.. she will be happy.. might try cupcakes to see how it goes with those

2 cups of extra fine brown rice flour
2/3 cup of potato starch
1/3 cup tapioca flour

and here is the recipe I used (oops don't have it on here.. will post it later.. it's on my phone too)

Glad you slept, Pixie! I was up early, hand grating the potatoes for kugli....just took it out of the oven. Spending Easter at the farm, have no idea what we're having, but my son said he was making Lithuanian sausage & sauerkraut.....he's turned into a traditionalist...who knew!

Just put the ham and turkey in the oven.
Mashed potatoes, mashed sweet potatoes, corn, pineapple, rolls.
Strawberries and raspberries.
Key lime cupcakes and sugar cookies for dessert.

was a great day with family again.. food was good.. even the Rachel Ray drunkin pasta with kale.. I added some asparagus too.. but all the polish stuff always rocks.. way too much food as always.. but I really enjoyed the day.. and I got to meet my sisters new BF.. and he is the only one I ever met with her.. that I liked off the bat.. YEAH!!

Yeah if you don't finish it by the next day, in the garbage it goes(then right outside cause it's gonna stink!)

Oven def on it's way out, hubby needs to fix it or get me a new one!......was supposed to be on 250 but temp was only 100....pork roast had to be finished on the grill....very tasty though!
